How To Make Mayo At Home:
Ingredients You’ll Need:
- 1 Teaspoon Salt
- 1/2 Teaspoon Dry Mustard (Can substitute with 1/2 Tablespoon Dijon Mustard)
- 1/4 Teaspoon Paprika
- Dash of Cayenne
- 2 Egg Yolks
- 2 Tablespoons Vinegar
- 2 Cups of Olive Oil (Can use other salad oils of your choice)
- 2 Tablespoons Lemon Juice
Instructions:
- In a small mixer bowl combine salt, dry mustard, paprika, and cayenne. Add egg yolks and vinegar ; beat mixture at medium speed till blended.
- Add the olive oil, 1 teaspoon at a time, beating constantly. Continue beating mixture till 1/4 cup oil has been added.
- While continuing to beat, add the remaining oil in increasing amounts by pouring in a thin, steady stream till all but 1/2 cup has been added.
- Once the mixture is smooth and creamy, alternate adding the remaining 1/2 cup olive oil and lemon juice. Beat it at medium speed till thoroughly blended.
- Ensure consistency is thick and smooth and store in the refrigerator. Use within 4 weeks. Enjoy!
Tip:
If your mayonnaise fails to form an emulsion, the mixture will separate and appear thin or curdled. If this happens, restore the mayonnaise by very slowly beating the separated mixture into an egg yolk. This may not work if you beat the egg yolk into the separated mayonnaise mixture.
