How To Make Vanilla Ice Cream At Home

Ingredients you will need:
- 1 1/2 cups sugar
- 1/4 cup all-purpose flour
- 4 cups milk (1 quart)
- 4 beaten eggs
- 4 cups whipping cream (2 pints)
- 3 tablespoons vanilla extract
- Rock Salt

Instructions:
- Combine sugar, flour, and ½ teaspoon salt. Stir in milk.
- Cook and stir over medium-high heat till slightly thickened and bubbly.
- Stir about 1 cup hot mixture into eggs.
- Return to hot mixture. Cook and stir 1 minute. Chill.
- Stir in cream and vanilla.
- Pour into ice cream freezer can till â…” full.
- Fit can into freezer. Adjust dasher; cover. Pack crushed ice and rock salt around can. Turn handle till crank turns hard.
- Remove ice to below lid. Remove lid and dasher, scraping off ice cream.
- Cover can with several thicknesses of waxed paper or foil. Plug opening in lid; replace lid. Pack more ice and salt around can. Cover with heavy cloth or newspaper. Let ripen 4 hours.
- Uncover freezer. Remove ice to below lid; remove lid. Makes 2½ quarts.

Tip:
Keeping ice crystals small is the key to making smooth homemade ice cream.
Solids such as sugar, eggs, milk fat, and gelatin break up and separate the ice crystals, preventing large, coarse crystals from forming.
Air cells also keep the crystals small. Agitating the ice cream in an ice cream freezer incorporates air, thus refining and smoothing the texture. The same goal is achieved in refrigerator-frozen ice cream by beating the partially frozen mixture and by folding in beaten egg whites.
